Mushroom, spring onion, bacon and cheese quiche


I was craving pizza, but didn't want to go shopping because there was plenty of food in the house. Don't you hate it when you have a loads of stuff in the fridge but you want the one thing that isn't there for dinner? It happens! Anyway, I decided to come up with something that was just as pleasing and comforting but use what I already had. Et voila! It was, believe it or not, my first quiche ever and very good!
Since it has some healthy stuff in it, no only eggs and cheese, I'm sending it to Cate at Sweetnicks for her ARF 5-a-day Tuesday event.

Mushroom, spring onion, bacon and cheese quiche

ready pastry
250g mushrooms
some smoked bacon for flavor
bunch spring onions
3 eggs
250 ml soya milk
grated cheese
chilli powder
fresh parsley

Fry the bacon until almost crisp, add the sliced mushrooms and fry until done. Unroll the dough onto a baking dish, cover the bottom with the mushroom and bacon mixture. Sprinkle as many sliced spring onions as you like - I love them so used a lot! Beat the eggs and the milk, stir in the cheese and parsley. Season with salt, pepper and chilli powder. And anything else you like. :-) Pour the egg mixture onto the mushrooms. I sprinkled with a bit more cheese. Bake!
