Banana Bread! Yum!

Both Joe and I Love banana bread. With a capital L. We had bananas that needed using up so I went searching for a recipe and google came up with one from Cooking Light. Here it is below - it turned out really great, even if I say so myself. The last time I made banana bread it also turned out great but I can't remember what recipe that was from. That's one of the reasons for why this blogging thing is so cool, I'll also be able to go back and find a recipe!

Classic Banana Bread

2 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 cup sugar (I wondered if brown or demerara sugar would work, does anyone know?)
1/4 cup butter, softened
2 large eggs
1 1/2 cups mashed ripe banana
1/3 cup plain low-fat yogurt
1 tsp vanilla extract

Preheat oven - everyone's oven is different but the original recipe said 350F.
Combine flour, baking soda and salt.
Beat sugar and butter until well blended (about 1 minute). Add the eggs, one at a time, beating well after each. Add banana, yogurt and vanilla; beat until blended. Add flour mixture; beat at low speed until moist.
Spoon batter into loaf pan and bake for about 1 hour.
