Sweet potato and courgette soup

Every Thursday, I get a box of vegetables and fruit delivered to me. I love it because this way I always have loads of fresh food in the house and because I don't always know what will be delivered so it forces me to try new things. But there are only two of us in the house so if we go out to dinner at all then invariably we have loads of stuff left over. Mondays I usually have to come up with a way to combine whatever is left. So last night, I made this Sweet potato and courgette soup. I had no idea if it would be edible but it actually turned out really good! I added some curry paste to give it some color and its spicyness and the sweetness of the potatoes went together really well!

I remembered to take a photo, but obviously have to work hard at my photography skills... but how do you take an interesting photo of soup anyway???

This is my entry into next week's ARF Five-a-day Tuesday over at Sweetnicks'. My Mom is coming over to visit me for a long weekend and we'll be going out a lot so I doubt I'll have time to cook before next Tuesday.

Sweet potato and courgette soup

1/2 red onion, diced
1 clove of garlic, diced
1 courgette, sliced thinly (I cut each slice in half)
1 large carrot, sliced into thick pieces
3 sweet potatoes, diced into small chunks
1/2 l vegetable stock
2 tsp curry paste (mine was a mild one, but any would work)
1 tsp garcic salt
1 tsp coriander
1/2 tsp chilli flakes

Fry the red onion until softened, add the garlic and fry for another minute or so. Add the courgette and sautee until softened, then add the carrot. Add the stock and some more hot water if needed. Add the sweet potatoes. Bring to the boiling point, then lower the heat. Add the curry paste and spices. Cover and simmer until the vegetables are cooked.
